The ridges on the cooking surface elevate the meat, poultry or firm fish (we recommend
only steak fish like sword fish, tuna, etc. to be used with the grill pan).
Any fat will drip out and away from the meat. The ridges also will create the typical
"grill marks". Ideal for creating lean meat or grilled fish dishes,
and for achieving that "outdoor grill" look during the winter months when the
barbecue is not accessible.
